Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass or gelatine
Sets the mixture as it cools, giving the finished charlotte its firm, sliceable body.
Cream
Whipped into the mixture for a light, airy texture and added richness.
Pineapple
Supplies the main fruit flavour and, once cooked and sieved, the body of the mousse.
Sugar
Sweetens the mixture and balances the natural acidity of the pineapple.

The step that matters

Stirring on ice before the mixture sets. Cooling the purée while stirring lets it thicken evenly. If it sets unevenly or too far before the cream is folded in, the cream will not blend smoothly and the texture will be lumpy.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Pineapplethe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
