Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Combine sugar and beaten egg whites in a bowl.

  2. Work the mixture together with the back of a spoon.

  3. Roll the mixture into balls about the size of a nutmeg.

  4. Dust sugar over the top of each ball.

  5. Place them on a sheet of paper at least an inch apart.

  6. Bake in a cool oven at 300°F (150°C) until light brown.
