Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemon juice
Provides the sharp acidity that defines the flavour of the ice.
Sugar
Adds sweetness and lowers the freezing point, keeping the ice softer.
Lemon rind
Contributes aromatic oils that add fragrance and bitter depth.
Orange juice
Adds sweetness and a mellower citrus note alongside the lemon.

The step that matters

Dissolving the sugar fully. Sugar must dissolve completely before freezing, because undissolved crystals create a gritty texture and sugar also lowers the freezing point so the ice stays scoopable.
