What each ingredient does

Strawberries
Provide the fruit that gives the preserve its flavor, color, and body.
Refined sugar
Sweetens the fruit and helps preserve it by binding water and inhibiting spoilage.

The step that matters

Boiling the strawberries with sugar. Bringing the mixture to a boil slowly lets the sugar dissolve and draw juice out of the fruit gradually, so the berries keep their shape. Boiling too fast or too long can break them down and make the preserve tough or overly thick.
