Canned Tomatoes

Ingredients

Directions

  1. Place very ripe tomatoes in a large pan and cover with boiling water to loosen the skin.

  2. Remove the skins from the tomatoes.

  3. Transfer the peeled tomatoes to a preserving kettle over moderate heat without adding water or seasoning.

  4. Bring the tomatoes to a boil and simmer for 30 minutes.

  5. While still boiling hot, fill the glass jars to the brim and seal tightly.

  6. Store the jars in a cool, dark closet. They will keep for two to three years.
