Stick Candy

Ingredients

Directions

Make the candy

  1. In a pot, combine sugar, water, vinegar (or cream of tartar), and glycerine.

  2. Boil without stirring for 20 to 30 minutes, until it becomes crisp when dropped in water.

  3. Just before pouring onto greased platters, add baking soda.

  4. Pour the mixture onto the platters to cool.

  5. Once cooled slightly, pour flavoring over the top.

Pull and shape

  1. When partly cool, pull the candy until very white.

  2. Draw it into sticks of your desired size and cut with shears into sticks or kiss-shaped drops.

  3. Color the candy if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the main body of the candy as it cooks into a hard, glassy mass.
Vinegar or cream of tartar
Acid that helps prevent sugar from crystallizing, keeping the candy smooth.
Glycerine
Helps keep the candy soft and prevents it from turning brittle or grainy.
Baking soda
Reacts with the hot acidic syrup to add air bubbles, lightening its texture.

The step that matters

Boil without stirring to the crisp stage. Stirring can trigger sugar crystals and make the candy grainy. Cooking until the drop turns crisp in water ensures the sugar reaches the hard-candy stage, so the candy sets firm rather than sticky.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Pineapplefits about as well
  4. Apricotfits about as well

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
