Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped proteins that help foam and stabilise the body of the drink.
Gum arabic
Adds body and helps keep the mixture smooth and evenly suspended.
Bicarbonate of soda
Reacts with tartaric acid to release carbon dioxide, making the drink fizz.
Tartaric acid
Reacts with bicarbonate of soda to release carbon dioxide and give a tart edge.
Coffee sugar
Provides sweetness and the bulk of the syrup base.

The step that matters

Keep the two halves separate until serving. Bicarbonate and tartaric acid react as soon as they meet and release carbon dioxide. Mixing them early wastes the fizz, so each half should only be combined in the glass.
