Corn Meal Gruel

Ingredients

Directions

Make the gruel

  1. Mix the fine Indian meal with cold water until smooth.

  2. Add the coarse sea salt and 1 quart of boiling water.

  3. Cook for 20 minutes, stirring frequently.

  4. If the gruel becomes too thick, add more boiling water to thin it.

Finish and serve

  1. For a richer flavor, stir in 1 tablespoon of cream if desired.

  2. Sweeten with sugar or add ginger to taste if preferred.

  3. For serving, toast a slice of bread and place it in the gruel.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine indian meal
Its starch thickens as it cooks in water, giving the gruel its body.
Cream
Adds fat, which gives a softer, richer mouthfeel to the gruel.

The step that matters

Mix the meal into cold water until smooth. Cornmeal starch clumps when it hits hot liquid directly. Starting it in cold water lets the grains separate and hydrate evenly, so the gruel cooks smooth. Stirring during the 20 minutes also keeps the meal from settling and scorching on the bottom of the pan.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (cream, sugar, bread):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Celeryfits about as well
  4. Gingerthe original

Fit is the average pairing score against cream, sugar, bread. Candidates are from the same food group and used in at least 100 recipes.
