Apple Tart

Oven, in the book's wordsA moderately quick oven

Ingredients

Directions

The book says “a moderately quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the apples

  1. Peel and slice the apples, placing them in a pudding dish with 1 tablespoon of water.

  2. If the apples are very firm, partially cook them before adding the crust.

Make and bake the crust

  1. In a bowl, mix 1 cup of thin cream with ½ cup of yeast and 2 cups of flour until light.

  2. Add enough flour to form a soft dough, then knead thoroughly for 15-20 minutes.

  3. Roll the dough evenly and cover the apples with it.

  4. Let the dish sit in a warm place until the crust rises, then bake at 400°F (200°C).

Serve

  1. Serve cold with cream and sugar, coconut sauce, or mock cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Quick-cooking tart apples
Provide the fruit filling that cooks down under the crust.
Thin cream
Adds moisture and richness to the dough.
Yeast
Produces gas that makes the crust rise and become light.
Flour
Forms the dough structure that holds the crust together.

The step that matters

Letting the crust rise in a warm place. Yeast needs time and warmth to produce gas; if the crust does not rise properly before baking, it will be dense rather than light.
