What each ingredient does

Salmon
Is the main protein, cooked gently in the aromatic liquid so it stays moist and tender.
Vinegar
Adds acidity that brightens the flavour of the bouillon and the fish.
Carrot
Adds subtle sweetness and aromatic depth to the cooking liquid.
Onion
Contributes savoury aroma and body to the cooking liquid.
Butter
Adds fat and richness to the base vegetables, carrying their aroma.

The step that matters

Boil the salmon for 12 minutes per pound. Salmon is cooked when its flesh turns opaque and flakes easily. Overboiling at a hard boil toughens the proteins and dries the fish, so keep the liquid at a steady simmer and check for doneness early.

Swap the clove

How well each one fits the dish's main ingredients (butter, carrot, onion, celery, vinegar, parsley, salmon):

Fit is the average pairing score against butter, carrot, onion, celery, vinegar, parsley, salmon. Candidates are from the same food group and used in at least 100 recipes.
