Baked Sturgeon

Ingredients

Directions

  1. Prepare the sturgeon steaks and parboil for 15 minutes. Let cool.

  2. Rub the marinade into the flesh of the fish.

  3. Bake covered for 10 minutes per pound, adding enough water to prevent burning.

  4. Serve with caper sauce.

  5. If using the forcemeat, let the parboiled fish cool completely and marinate for 30 minutes.

  6. Gash the surface of the fish nearly an inch deep and rub in the forcemeat mixture.

  7. Bake until cooked through.
