Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the sauce

  1. Heat the butter in a pan.

  2. Stir in the flour and mustard to make a roux.

  3. In another pot, heat the milk until scalding hot.

  4. Mix the hot milk with the roux and cook for 3 minutes.

Assemble and bake

  1. Transfer to a bowl and add crab meat, salt, cayenne, and lemon juice.

  2. Fill shells or pâté pans with the mixture.

  3. Top with breadcrumbs and small bits of butter.

  4. Bake in a 400°F (200°C) oven until golden.

What each ingredient does

Crab meat
Forms the main body of the filling and provides the dish's core flavor.
Butter
Enriches the roux and adds fat for richness and browning on top.
Flour
Thickens the milk into a smooth sauce when cooked with butter as a roux.
Milk
Forms the liquid base of the sauce, giving it body and a creamy texture.
Mustard
Adds sharp, pungent flavor that balances the richness of the sauce.
Breadcrumbs
Form a crisp, golden topping when baked.

The step that matters

Mix the hot milk with the roux and cook for 3 minutes. Flour must be cooked long enough after the liquid goes in; otherwise the sauce keeps a raw, pasty taste and may stay thin or lumpy. Adding hot milk to the roux helps it blend smoothly without clumping.

Swap the mustard
