Why it works: Turnip and capers match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 145 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Corned Beef

Ingredients

Directions

Prepare the beef

  1. Wash the corned beef thoroughly.

  2. If the beef is very salty, soak it in cold water for 1 hour.

  3. Place the beef in a pot and cover it deeply with cold water.

  4. Add the chopped onion, carrot, and turnip if using the liquid for soup.

Cook and finish

  1. Cook slowly for 30 minutes per pound of beef.

  2. Once done, let the beef sit in the liquid for at least 15 minutes.

  3. Scrape the top of the meat and trim off ragged edges.

  4. For the sauce, strain 1 cup of the pot liquor and thicken it with a white roux made from butter and flour.

  5. Stir in the capers or chopped pickles.

  6. After dinner, cover the beef with a flat plate and place a heavy weight on top to press it.

  7. Serve cold or use in hash.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corned beef
Provides the main meat and savory flavor, becoming tender with slow simmering.
Butter
Enriches the white roux, giving the sauce body and a rich flavor.
Flour
Thickens the pot liquor sauce when cooked with butter into a roux.
Capers or chopped pickles
Adds acidity and a sharp, briny note to the sauce.

The step that matters

Cook slowly in cold water. Starting in cold water and simmering gently keeps the meat tender and prevents the muscle fibers from tightening and toughening, which happens with rapid boiling.

Swap the carrot

How well each one fits the dish's main ingredients (beef, onion, turnip, capers, butter, flour):

  1. Leekfits better
  2. Shallotfits better
  3. Chivefits better
  4. Carrotthe original

Fit is the average pairing score against beef, onion, turnip, capers, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
