Corned Beef and Dumplings

Ingredients

Directions

Prepare the beef

  1. Wash the beef thoroughly and soak it in cold water for 15–20 minutes.

  2. Plunge the beef into a pot of boiling water, ensuring it is fully covered.

  3. Cook steadily for 15 minutes per pound after the boil resumes.

  4. Remove the beef and cover it to keep warm.

Make the dumplings

  1. Strain the cooking liquid through a coarse cloth, reserving 1 cup for drawn butter.

  2. Bring the strained liquid back to a boil and add the dumplings.

  3. For the dumplings, mix flour, cornmeal, baking powder, shortening, and salt. Sift the mixture three times, then chop in the shortening.

  4. Stir in cold water until a soft dough forms, then cut into rounds.

  5. Cook the dumplings for 15 minutes, then remove them with a slotted spoon.

Make the drawn butter and serve

  1. For drawn butter, heat the reserved pot liquor to a boil. Stir in butter and thicken with flour mixed with cold water.

  2. Add chopped pickle and mustard just before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corned beef
Provides the main meat and savory flavor of the dish.
All-purpose flour
Forms the dumpling dough and, mixed with cold water, thickens the drawn butter.
Cornmeal
Adds a coarser, slightly crumbly texture to the dumplings.
Baking powder
Releases gas in the dough so the dumplings rise and turn light.
Butter
Adds richness and a silky body to the drawn butter.

The step that matters

Keeping the dumplings light. Cold water and minimal stirring keep the dough tender, and the dumplings should cook covered in gently simmering liquid so they rise and set rather than collapse or turn heavy.
