Moulded Beef

Ingredients

Directions

Prepare the beef

  1. Pass the beef through a meat chopper twice, removing all bits of fiber and gristle.

  2. Season the beef with paprika, salt, mustard, and onion juice.

  3. Mix in the breadcrumbs, beaten egg, minced pork, and quartered mushrooms.

  4. Wet the mixture with stock and press it into a buttered mold or bowl, covering tightly with a cloth.

Cook and set

  1. Place the mold in boiling water, ensuring the water does not float the mold, and cook for nearly three hours.

  2. After cooking, place a plate on top of the meat, apply a heavy weight, and let it cool completely.

Serve

  1. Turn out the molded beef and slice horizontally.

What each ingredient does

Lean raw beef
Forms the main body of the loaf and provides the meaty flavor and texture.
Raw egg
Binds the mixture so the molded loaf holds together when sliced.
Fine dry breadcrumbs
Absorb moisture and help the loaf hold a firm, tender texture.
Minced fat pork
Adds fat that keeps the moulded beef moist and rich during cooking.
Champignons
Add earthy flavor and pieces of texture throughout the slices.

The step that matters

Keeping the mold out of direct floating contact with the boiling water. If the mold floats or the water boils too hard, the loaf can shift, cook unevenly, or lose its shape. Gentle, steady simmering in a mold that stays submerged and stable helps the meat set evenly.
