Scalloped Veal
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Chop the cold cooked veal, removing bones and gristly bits.
Season the veal with salt and pepper.
Layer the veal in a buttered baking dish.
Cover with salted and peppered cracker crumbs, adding bits of butter on top.
Moisten with stock, milk, or oyster juice.
Repeat layering with remaining ingredients, finishing with a thick layer of cracker crumbs on top.
Bake covered in a 350°F (175°C) oven for 30 minutes, then uncover and brown quickly.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
