Veal and Ham Pates

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Mix the minced veal and ham in a bowl. Add champignons if using.

  2. Stir in breadcrumbs, salt, cayenne, lemon juice, and catsup.

  3. Moisten with stock or a mixture of butter and water.

  4. Heat the mixture in a double boiler until it reaches a smoking boil.

Fill and bake

  1. Remove from heat and stir in the beaten egg and sherry.

  2. Fill the hot pastry shells with the mixture.

  3. Bake in the oven at 400°F (200°C) for 2-3 minutes, ensuring the mixture does not cook.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold cooked veal
Forms the main body of the filling and gives it its meaty texture.
Cold cooked ham
Adds savory flavor and firmness alongside the veal.
Beaten egg
Binds the minced meat together and helps the filling set when heated.
Fine breadcrumbs
Absorb moisture and help hold the filling together.

The step that matters

Adding the beaten egg off the heat. Egg proteins set when heated, so stirring it in after removing the mixture from heat, and baking only briefly, keeps the filling tender rather than scrambled or overcooked.
