Ingredients

Directions

Prepare the veal

  1. If using raw veal, boil it until cooked, then let it cool.

  2. Boil down the cooking liquid to ½ cup or reduce 1 cup of gravy similarly.

Make the loaf

  1. Add butter, lemon juice, salt, pepper, and mace to the reduced liquid.

  2. Chop the veal and ham very finely, then mix them well with the gravy mixture.

  3. Press the mixture firmly into a bowl.

  4. Place a saucer or small plate on top and weigh it down with a flat-iron or similar weight.

  5. Let it sit overnight to firm up.

Serve

  1. Turn it out bottom side up and cut into thin slices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it its meaty texture.
Cooking liquid or gravy
Supplies moisture and gelatin that help the loaf bind and set when chilled.
Boiled ham
Adds savory flavor and contributes to the loaf's sliceable texture.
Butter
Adds richness and a smooth mouthfeel to the reduced liquid.
Lemon juice
Adds acidity that brightens the flavor of the rich meat.

The step that matters

Weighting the mixture overnight. Firm pressing and a weight while chilling let the gelatin from the liquid set and compact the meat, so the loaf holds together when sliced.

Swap the mace

How well each one fits the dish's main ingredients (veal, butter, lemon, pepper, ham):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against veal, butter, lemon, pepper, ham. Candidates are from the same food group and used in at least 100 recipes.
