Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb breast or scrags
Provides the rich meat that becomes tender during long, slow, covered cooking.
Stock
Creates moist steam and a braising liquid that keeps the meat from drying out.
Onion
Adds savory sweetness and aroma to the braising liquid and gravy.
Tomatoes
Contribute acidity and body to the braising liquid and gravy.
Browned flour
Thickens the strained gravy so it coats the meat.

The step that matters

Cook slowly with the pot covered. Low, covered heat lets tough connective tissue break down gradually into tender meat; high heat would tighten the muscle fibres and dry the meat before it softens.

Swap the tomato

How well each one fits the dish's main ingredients (lamb, turnip, onion, pepper, butter, flour):

  1. Okrafits better
  2. Leekfits better
  3. Chivefits better
  4. Tomatothe original

Fit is the average pairing score against lamb, turnip, onion, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
