  2. Lay the stuffed mutton on top of the vegetables.

  3. Pour 2 cups of boiling water over the mutton.

  5. Cook for 2 hours, basting four times.

  6. Remove the cover.

  7. Baste with butter.

  8. Sprinkle with pepper, salt, and flour to brown.

Make the gravy and serve

  1. Strain the gravy through a colander.

  2. Thicken with browned flour.

  3. Serve the gravy in a gravy boat.

  4. Serve the mutton with mashed or stewed young turnips as a side.

What each ingredient does

Leg of mutton
Forms the main meat, which becomes tender through long covered cooking in liquid.
Bread crumbs
Absorb the butter and juices in the stuffing, keeping the filling moist.
Butter
Adds fat and richness, and helps the surface brown when basted.
Almonds
Add a nutty flavour and a little body to the stuffing.
Flour
Browns on the surface and thickens the gravy.

The step that matters

Cover the pan tightly and baste during the 2-hour cook. The covered pan traps steam so the meat cooks gently and stays moist. Regular basting keeps the surface from drying out before the final browning.
