Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

  1. Trim the lamb chops neatly and season with salt and pepper.

  2. Roll the chops in beaten egg and then in cracker crumbs.

  3. Fry the chops in deep cottolene until golden brown.

  4. Place the fried chops on a stoneware or metal dish and cover both sides with grated Parmesan cheese.

  5. Set the dish in a hot oven (400°F / 200°C) for 3 minutes to melt the cheese.

  6. Alternatively, hold a red-hot shovel above the chops to crisp the cheese.

  7. Cook the spaghetti in salted water until tender, then drain and season with butter, salt, and paprika or cayenne.

  8. If desired, pour enough strained tomato sauce over the spaghetti to moisten it well, then arrange the lamb chops on top.
