What each ingredient does

Kidneys
Form the main body of the dish, cooked by broiling until done through.
Bread crumbs
Bulk out the stuffing and soak up butter and juices for a soft texture.
Salt pork
Adds salty, savory fat that flavours the stuffing.
Butter
Adds richness and moisture to the kidneys and the stuffing.
Lemon juice
Adds acidity that brightens the rich kidney and pork flavours.

The step that matters

Broil the kidneys, back downward, over a bright fire. Kidneys cook quickly and turn tough and dry if overcooked. A hot fire sears the cut surface, and the time should be watched closely so the centre stays tender.

Swap the onion

How well each one fits the dish's main ingredients (butter, bread, pork, parsley, pepper, lemon):

  1. Potatofits better
  2. Shallotfits better
  3. Capsicumfits better
