Stuffed Ham

Ingredients

Directions

Prepare the ham

  1. Soak the ham overnight.

  2. Scrub the ham well in the morning.

  3. Use a narrow, sharp knife to loosen the meat along the bone. Withdraw the loosened meat.

  4. Remove the flat bone from the butt end of the ham.

Stuff and tie

  1. Fill the cavity with a stuffing of bread crumbs, seasoned with pepper, butter, onion, and Worcestershire sauce. Pack the stuffing tightly.

  2. Sew the ham into shape using mosquito netting.

Cook and press

  1. Cover the ham with cold water mixed with vinegar.

  2. Cook the ham for 20 minutes per pound after boiling begins.

  3. Leave the ham in the water until lukewarm.

  4. Remove the ham from the water.

  5. Press the ham under an inverted dish with a heavy weight for 8 to 10 hours.

  6. Remove the cloth and skin.

Finish and serve

  1. Dot the top with black pepper or paprika using your fingertip to create a pattern.

  2. Serve surrounded by a garland of asparagus tops and nasturtium flowers, or parsley and marigolds.

What each ingredient does

Ham
Is the main meat, cooked whole and then pressed into a compact shape.
Bread crumbs
Absorb seasonings and juices in the stuffing, giving it body and a moist texture.
Butter
Adds fat and richness to the bread crumb stuffing, keeping it moist.
Onion
Adds aromatic flavour to the stuffing as it softens and sweetens during cooking.
Vinegar
Adds mild acidity to the cooking water, sharpening the flavour of the ham.

The step that matters

Pack the stuffing tightly. Loose stuffing can shift or leave gaps during cooking and pressing, so the ham may lose its shape and slice unevenly. Firm packing keeps the filling in place as the meat cooks and compresses.

Swap the onion

How well each one fits the dish's main ingredients (ham, vinegar, bread, pepper, butter, sauce):

  1. Mustardfits better
  2. Capsicumfits better
  3. Shallotfits about as well
  4. Onionthe original
