Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the meat that is slowly cooked until tender in the covered pot.
Flour
Dredging coats the chicken, helping it brown and lending body to the gravy.
Brown roux
Cooked flour and fat that thickens the gravy and adds a toasted, nutty flavour.
Butter
Basting adds fat that promotes browning and a rich flavour on the skin.

The step that matters

Cover again to brown. Covering traps steam, so the skin can soften instead of crisping. Browning needs dry surface heat, so the chicken may need uncovering or closer attention to colour.
