Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

  1. Stuff and truss the chicken.

  2. Wrap the chicken in thin slices of ham and bind the ham tightly to the chicken with cotton string.

What each ingredient does

Whole chicken
Forms the main body of the dish, cooking slowly to tender, moist meat.
Cold boiled corned ham
Wrapped around the chicken, it adds salty, savoury flavour that seasons the meat.
Consommé or stock
Liquid in the roaster that creates steam and flavours the meat and drippings for the gravy.
Brown roux
Flour and fat cooked together to thicken the gravy smoothly.
Mushrooms
Add earthy flavour and body to the gravy.

The step that matters

Checking doneness with a skewer. Poultry must be cooked through, but overcooking dries the meat. Testing the thickest part of the breast with a skewer, looking for clear juices and easy entry, helps you remove the chicken at the right moment, since cooking time alone varies with bird size.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, ham, butter, onion, mushroom, pepper):

  1. Garlicfits better
  2. Thymefits better
  3. Parsleythe original
  4. Celeryfits about as well

Fit is the average pairing score against chicken, ham, butter, onion, mushroom, pepper. Candidates are from the same food group and used in at least 100 recipes.
