Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ducks
Main protein; roasting cooks the meat while the skin renders and crisps.
Bread crumbs
Absorb the butter and seasoning inside the cavity, keeping the stuffing moist and lightly textured.
Butter
Adds fat for richness and helps the skin brown as it is basted over the ducks.
Flour
Dredged onto the skin and browned, it helps form a golden crust and thickens the gravy.
Giblets
Chopped and simmered for the gravy, adding savory meaty flavor to the pan juices.

The step that matters

Roast covered for the stated time per pound. Roasting time depends on weight and doneness, and covered roasting with boiling water traps steam that keeps the meat moist. Undercooking risks an unsafe bird, while overcooking dries the meat and toughens it.

Swap the onion

How well each one fits the dish's main ingredients (bread, butter, pepper, sage, flour):

  1. Shallotfits better
  2. Capsicumfits better
  3. Sweet potatofits better
  4. Onionthe original

Fit is the average pairing score against bread, butter, pepper, sage, flour. Candidates are from the same food group and used in at least 100 recipes.
