Deviled Eggs

Ingredients

Directions

Prepare the eggs

  1. Place the boiled eggs in cold water immediately after cooking to make peeling easier.

  2. Carefully cut the eggs in half, preserving the whites.

  3. Mash the yolks with melted butter, mustard, salt, and pepper until smooth.

  4. Form the yolk mixture into balls the size of the yolks and place them into the halved whites.

  5. Secure the halves together with soft string or toothpicks.

Coat and fry

  1. Roll the stuffed eggs in beaten egg, then in bread crumbs.

  2. Fry in boiling cottolene until golden brown.

  3. Remove the strings or toothpicks before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
The whites set to hold the yolk filling while the yolks give the filling its richness.
Melted butter
Adds fat to the yolks, making the filling smooth and rich.
Dry mustard
Adds sharp, pungent flavour that balances the richness of the yolks.
Bread crumbs
Form a crisp, browned coating when fried.

The step that matters

Fry in boiling cottolene until golden brown. The coating browns quickly in very hot fat, so the crumbs can burn before the filling warms through if the fat is too hot or the eggs are left too long.
