Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut puff pastry into strips 3 inches long and 2 inches wide.

  2. Sprinkle thickly with Parmesan cheese, salt, and cayenne pepper.

  3. Fold the strips in half lengthwise, creasing them firmly.

  4. Bake in a 400°F (200°C) oven.

  5. Brush with beaten egg white 3 minutes before removing from the oven.

  6. Sift powdered cheese on top before serving.
