Cheese Straws

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the flour, grated cheese, salt, cayenne, and egg yolk. Add enough cream to form a soft paste.

  3. Roll out the dough thinly and cut into strips the length of your middle finger and one-third as wide.

Bake and finish

  1. Bake until pale brown.

  2. Before removing from the oven, brush with egg white and sprinkle with powdered cheese.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Prepared flour
Forms the structure of the dough once bound with egg and cream.
Grated cheese
Adds flavour and fat, contributing to the savoury taste and golden colour.
Egg yolk
Enriches the dough and helps bind it into a smooth, pliable paste.
Egg white
Brushed on top before baking, it helps the surface brown and gives a glossy finish.

The step that matters

Baking until pale brown. Thin strips can easily over-brown or dry out because they have little mass. Pulling them when only pale brown keeps them crisp but tender, as the sugars and proteins in the cheese darken quickly at high heat.
