Swedish Baked Potatoes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Bake large potatoes whole.

  2. Cut a cap from the top of each potato and scoop out the mealy potato without breaking the skins.

  3. Fill the potatoes with a hot mixture of boiled fish, whipped with cream and butter, and seasoned to taste.

  4. Replace the caps on the potatoes and reheat in the oven at 400°F (200°C) for three minutes or until very hot.
