Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Spinach
- Forms the bulk of the dish and wilts down as it cooks.
- Baking soda
- Raises the pH of the water, helping the spinach keep a bright green colour during cooking.
- Sugar
- Adds a touch of sweetness that balances the spinach's natural bitterness.
- Lemon juice
- Adds acidity that brightens the flavour of the cooked greens.
- Butter
- Adds fat and richness, carrying flavour and giving a smooth mouthfeel.
The step that matters
Gently press out remaining juice without bruising the spinach. Cooked spinach is delicate and holds a lot of liquid. Pressing too hard tears the leaves and turns them mushy, while leaving too much water makes the dish watery and dilutes the seasoning.
