Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Forms the bulk of the slaw and softens slightly when hot vinegar is poured over it.
Vinegar
Provides sharp acidity that balances the sugar and cuts the richness of the dish.
Sugar
Adds sweetness to offset the acidity of the vinegar.
Butter
Adds fat and a rounder, richer mouthfeel to the warm dressing.
Sour cream
Adds creaminess and tang, and is stirred in off the heat so it stays smooth.

The step that matters

Stir in the sour cream quickly, off the heat. Sour cream contains proteins that can curdle or separate when exposed to high heat or acid for long. Transferring the cabbage to the dish and stirring promptly keeps the dressing smooth and creamy.

Swap the white pepper

How well each one fits the dish's main ingredients (cabbage, vinegar, butter, sugar, mustard, cream):

  2. Capersfits better
  3. Cinnamonfits better
  4. White pepperthe original
