Creamed Cucumbers

Ingredients

Directions

Prepare the cucumbers

  1. Peel the cucumbers and slice them crosswise into ½-inch pieces.

  2. Soak the sliced cucumbers in ice water for 30 minutes.

  3. Cover the cucumbers with boiling water and simmer for 15 minutes.

  4. Drain and discard the water.

Keep the cucumbers warm

  1. Cover the cucumbers with more boiling water mixed with 1 tablespoon of melted butter.

  2. Season with salt and pepper, and keep warm in a pan over boiling water.

Make the cream sauce

  1. In a separate pan, make a roux by heating 1 tablespoon of butter and mixing it with 1 tablespoon of flour until smooth.

  2. Thin the roux with 1 cup of hot cream and season with salt and cayenne.

Serve

  1. On a hot platter, line with slices of buttered toast, place the cucumbers on top, squeeze the juice of ½ lemon over them, and pour the cream sauce over everything.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
The main vegetable, softened by soaking and simmering until tender and mild.
Butter
Adds richness and flavour, and forms the base of the roux with the flour.
Flour
Thickens the cream sauce when cooked with butter into a roux.
Hot cream
Forms the sauce base, adding richness and a smooth, body-giving texture.
Lemon
Adds brightness and acidity that cuts through the rich cream sauce.

The step that matters

Making the roux and thinning it with hot cream. The flour must be fully blended into the melted butter so no lumps form. Adding the hot cream gradually while stirring keeps the sauce smooth, and the roux thickens the cream as it heats.
