Boiled Artichokes

Ingredients

Directions

  1. Trim the stems and lower leaves of the artichokes.

  2. Cut the tops evenly and remove the hard core.

  3. Wash the artichokes and soak them in cold water for 10 minutes.

  4. Shake off the excess water and cook in boiling salted water for 35 minutes, or until the bottoms are tender.

  5. If large, cut the artichokes in half; if moderate, serve whole with drawn butter or sauce piquante.
