Mushrooms and Shirred Eggs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mushroom base

  1. Stew the mushrooms in boiling milk and water with salt for five minutes, ensuring enough liquid to prevent burning.

  2. Remove from heat, stir in the white roux, and let cool slightly while still warm.

  3. Beat in the yolk of the raw egg, season with pepper, salt, and onion juice.

Fill and bake

  1. Fill ramekins or small pans three-quarters full with the mixture.

  2. Break a fresh egg on top of each, sprinkle with bread crumbs, dot with butter, and season with salt and pepper.

  3. Bake in a shallow pan of water at 400°F (200°C) for about eight minutes.

What each ingredient does

Mushrooms
Provide the main body and earthy flavor of the dish while softening in the milk.
White roux
Thickens the milk and mushroom mixture into a creamy, spoonable base.
Raw egg yolk
Enriches the base and helps it set into a smooth, custard-like texture.
Fresh egg
Sets on top of the mushroom base during baking, forming the shirred egg.
Milk
Adds moisture and richness, and with the roux forms the creamy base.

The step that matters

Bake in a shallow water bath. Gentle, moist heat from the water around the ramekins keeps the base creamy and lets the top egg set without turning rubbery or dry. Eight minutes is brief, so watch for the whites to set while the yolk stays soft.

Swap the onion

How well each one fits the dish's main ingredients (mushroom, milk, egg, pepper, bread, butter):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against mushroom, milk, egg, pepper, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
