Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spanish chestnuts
Form the main bulk and body of the croquette mixture.
Butter
Adds richness and softens the mixture for smoother shaping.
Egg yolk
Binds the mixture so the croquettes hold their shape.
Fine breadcrumbs
Absorb moisture and add body to the mixture for easier shaping.

The step that matters

Let the mixture cool completely before shaping. Warm chestnut mixture is soft and sticky, so it will not hold its shape. Cooling firms the starches and binders, and chilling afterward keeps the croquettes intact in hot oil.
