What each ingredient does

Milk
Forms the liquid base that the bread crumbs thicken into a sauce.
Fine white bread crumbs
Absorb the milk and swell, thickening the sauce to a smooth consistency.
Butter
Adds richness and a smooth, rounded mouthfeel to the sauce.
Onion
Infuses the milk with a mild savory aroma before being strained out.
Fried bread crumbs
Add a toasted, nutty browned texture on top of the sauce.

The step that matters

Add the white bread crumbs and cook for 3 minutes. Bread crumbs must be given time to absorb the hot milk and swell; adding them too little or stopping too soon leaves the sauce thin and grainy. Stirring keeps them from clumping and scorching on the base of the pan.

Swap the white pepper

How well each one fits the dish's main ingredients (bread, butter, milk, onion, nutmeg):
