Quick Jelly Cake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Assemble the cake

  1. Cut the sponge cake horizontally into four parts.

  2. Spread layers of tart and sweet fruit jelly between alternate layers.

  3. Fit the slices smoothly into place.

Frost and set

  1. Whip the egg whites until stiff and gradually add powdered sugar to create a frosting.

  2. Cover the whole cake with the frosting.

  3. Set the cake in a 400°F (200°C) oven for 5 minutes to harden, but do not let it color.

  4. Afterward, place the cake in a sunny window.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sponge cake
Provides the light, airy base that the jelly and frosting are layered onto.
Fruit jelly
Adds tart and sweet flavor and moisture between the cake layers.
Egg whites
Whipped to stiff peaks, they form the structure of the frosting.
Powdered sugar
Dissolves into the whipped whites to sweeten and stabilize the frosting.

The step that matters

Setting the frosting in the oven. Five minutes at 400°F is brief, but the frosting can brown quickly. Egg white sugar mixtures color fast at high heat, so watch closely to harden the frosting without browning it.

Swap the currant

How well each one fits the dish's main ingredients (egg, sugar):
