Baked Huckleberry Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Combine milk, eggs, flour, yeast, salt, and boiling water in a bowl to make a batter, leaving out the huckleberries.

  2. Set the batter in a warm place to rise for about 4 hours.

  3. If the batter is light, gently stir in the dredged huckleberries.

Bake and serve

  1. Pour the mixture into a buttered cake mold.

  2. Bake in a 350°F (175°C) oven for 1 hour.

  3. Turn out and serve with hard sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Add structure and richness to the batter as they set during baking.
All-purpose flour
Forms the main structure of the batter as it bakes.
Yeast
Produces gas that makes the batter rise before baking.
Milk
Adds moisture and softness to the batter.
Huckleberries
Provide fruit flavor and juicy pockets throughout the pudding.

The step that matters

Stir in the huckleberries gently. Overmixing knocks air out of the risen batter, making the pudding dense. Dredging the berries in flour helps keep them suspended rather than sinking to the bottom.
