Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Egg whites
Whipped to foam, they add lightness and airy texture to the set mixture.
Sugar
Adds sweetness and helps balance the flavor of the rose extract.

The step that matters

Folding the jelly into the whipped egg whites. Fold once the jelly has just begun to thicken, not when it is fully set. If it is too liquid, the foam deflates; if it is too firm, it will not blend and the lightness is lost.
