Nesselrode Pudding

Ingredients

Directions

  1. Make a rich custard as for Delmonico Ice-Cream.

  2. When the custard is more than half-frozen, add the diced marrons glacis.

  3. Remove the paddle from the freezer and use a long-handled spoon to push the marrons into the center of the custard.

  4. Replace the top of the freezer and turn it a dozen times to mix.

  5. Pack down with fine ice and rock salt, and leave for at least two hours.

  6. Turn out the frozen pudding and serve with whipped cream around the base.
