What each ingredient does

Stale bread
Forms the sturdy rounds that hold the filling and crisp when fried.
Grated american cheese
Melts into the filling, providing rich flavor and a savory, binding paste.
Butter
Adds richness and flavor to the bread and helps it brown in the frying fat.
Cottolene
Provides a high-heat frying fat that gives the sandwiches an even golden crust.

The step that matters

Fry the sandwiches in hot dripping or a mixture of half butter and half cottolene until golden.. The fat must be hot enough to brown the bread quickly. If it is too cool, the sandwiches absorb grease and turn soggy before the crust sets and the cheese softens.
