Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turtle meat
Provides the main body, savoury flavour and richness of the soup.
Green fat
Adds richness and a rounded, mellow flavour to the broth.
Browned flour
Thickens the soup and adds a toasted, nutty note.
Onions
Build savoury depth and sweetness as they cook down into the broth.

The step that matters

Thicken slightly with browned flour. Flour must be stirred in smoothly and simmered long enough to cook out its raw taste and to thicken evenly without lumps, since it only thickens properly when it is fully dispersed and heated.

Swap the onion

How well each one fits the dish's main ingredients (pepper, meat, flour):

  1. Shallotfits better
  2. Capsicumfits better
  3. Okrafits better
  4. Onionthe original
