What each ingredient does

Giblets
Provide the main meat flavour and body of the soup as they simmer for hours.
Butter
Fat that softens the vegetables and carries flavour from the pan into the soup.
Flour
Coats the giblets so they brown, and helps thicken the broth.
Browned flour
Thickens the soup and adds a toasted, nutty flavour.
Turnip
Adds mild sweetness and body to the broth as it cooks down.
Carrot
Adds natural sweetness and colour to the broth.

The step that matters

Browning the floured giblets. Flour on the giblets must be browned in the fat before water is added. Browning creates savoury flavour through the Maillard reaction, and cooking the raw flour removes its pasty taste.

Swap the turnip

How well each one fits the dish's main ingredients (carrot, onion, butter, chicken, flour, pepper, egg):

  1. Leekfits better
  2. Potatofits better
  3. Capsicumfits better
  4. Turnipthe original

Fit is the average pairing score against carrot, onion, butter, chicken, flour, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
