Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Pounded to a paste, they thicken the soup and give it a rich, creamy body.
Cream
Adds richness and a smooth, silky texture to the finished soup.
Hard-boiled egg yolks
Mixed with cream, they enrich the soup and help it thicken smoothly.
Cold poultry
Pounded into the almond paste, it provides the main body and protein of the soup.
White stock
Forms the liquid base of the soup, carrying all the other flavors.

The step that matters

Adding the egg yolk and cream mixture. Once the yolks are in, the soup must be heated gently and not allowed to boil hard, because the egg proteins can curdle and turn grainy when overheated.

Swap the mace

How well each one fits the dish's main ingredients (almond, bread, lemon, cream, egg):

  1. Nutmegfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against almond, bread, lemon, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
