Cream Oysters on the Half Shell

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the cream

  1. Combine hot water, milk, thick cream, and coarse sea salt in a saucepan.

  2. Place the saucepan in a kettle of hot water and heat until it just boils.

  3. Stir in butter and the flour or starch mixed with a little cold milk.

  4. Stir and beat the cream until smooth.

Fill and bake

  1. Wash and butter the oyster shells.

  2. Place a large oyster in each shell.

  3. Arrange the shells in a large baking pan, propping them up with pebbles or bits of shell.

  4. Fill each shell with the prepared cream.

  5. Bake in a hot oven at 400°F (200°C) for 5 to 6 minutes until brown.

  6. Serve in the shell.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Thick cream
Adds richness and body, giving the filling a smooth, creamy texture.
Butter
Adds fat for richness and smoothness in the cream sauce.
Rice flour, corn starch, or arrowroot
Thickens the liquid as it heats, giving the cream a smooth, set texture.
Oysters
Provide the main ingredient and delicate briny flavour in the filling.

The step that matters

Bake in a hot oven until brown. Starch-thickened cream sets as it heats, but baking too long can curdle or dry the filling and overcook the oyster. Watch closely for the short 5 to 6 minute window.
