What each ingredient does

Quails
Form the main body of the pie, becoming tender and flavourful as they cook in the crust.
Salt pork or bacon
Adds fat and savoury flavour that seasons the quails and eggs as the pie bakes.
Hard-boiled eggs
Add richness and a soft, creamy texture among the meat.
Butter
Adds fat and moisture, enriching the filling and helping it taste rich.
Lemon juice
Adds acidity that brightens the rich, fatty flavours of the pie.
Flour
Thickens the butter and cooking liquid, giving the filling a light body.

The step that matters

Covering the pie with the top crust. Leaving an opening in the center lets steam escape during baking, so the crust cooks through without becoming soggy or bursting.
