Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. In a bowl, combine chopped ham, bread crumbs, pepper, salt, and melted butter.

  2. Moisten the mixture with milk to form a soft paste.

  3. Half fill patty pans with the mixture.

Bake and serve

  1. Carefully break an egg on top of each filled patty pan.

  2. Dust with additional pepper and salt, then sprinkle with powdered crackers.

  3. Bake in a 400°F (200°C) oven for about 8 minutes.

  4. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set in the pan to form a soft, cooked centre atop the filling.
Bread crumbs
Absorb milk and butter to bind the ham into a soft, spreadable paste.
Butter
Adds richness and moisture to the filling.
Milk
Moistens the crumbs so they form a soft paste that holds together.
Chopped ham
Provides savoury, salty flavour and substance to the base.

The step that matters

Carefully break an egg on top of each filled patty pan.. Breaking the egg gently keeps the yolk intact and centred on the filling, so it cooks evenly rather than spreading or breaking into the crumbs.
