Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Stew the chicken pieces until tender.

  2. Season the chicken with butter, pepper, and salt.

  3. Thicken the gravy by mixing flour with water and adding it to the stew.

Assemble and bake

  1. Line a deep dish with pie crust.

  2. Layer the stewed chicken and thick slices of boiled potatoes in the dish.

  3. Repeat the layers and pour the gravy over them.

  4. Cover the dish with pie crust and cut a slit in the top.

  5. Bake at 400°F (200°C) until the crust is done.

  6. Serve hot.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Slow stewing until tender breaks down the meat so it becomes soft and juicy in the filling.
Flour
Thickens the stewing liquid into a gravy that binds the filling and keeps it from running out.
Potatoes
Hold their shape as thick slices and add starchy body to the filling.
Rich pie crust
Forms the sealed case that encloses the filling and browns in the oven.

The step that matters

Thicken the gravy by mixing flour with water. Flour mixed with water before adding it to the hot stew disperses evenly and thickens the liquid smoothly; dumping dry flour in causes lumps that stay in the gravy.

Swap the potato

How well each one fits the dish's main ingredients (chicken, butter, pepper, flour):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Leekfits about as well
  4. Spinachfits less well

Fit is the average pairing score against chicken, butter, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
