Roast Turkey

Ingredients

Directions

Prepare

  1. Dress the turkey and season the inside with salt and pepper. If prepared a day in advance, it will be better seasoned.

  2. For stuffing, rub the stale bread fine and set aside.

  3. Cook the chopped onion in butter for a few minutes without browning.

Stuff and season

  1. Stir the cooked onion into the bread with salt, pepper, sage, and enough melted butter to bind it.

  2. Stuff the turkey, tie the wings and thighs to secure the stuffing, and season the outside with salt and pepper.

Roast

  1. Place 1½ cups of water in the dripping pan with the turkey.

  2. Lay 2-3 pieces of fat pork on top or rub the turkey with lard.

  3. Once the turkey begins to brown, cover it with a damp cloth and baste frequently.

What each ingredient does

Turkey
Provides the main protein; its flesh sets as it cooks and carries the seasoning.
Stale baker's bread
Forms the body of the stuffing and soaks up butter and juices for a moist texture.
Butter
Adds fat and richness, binding the stuffing and carrying flavour through the bird.
Fat pork or lard
Adds fat over the skin so it stays moist and browns more evenly in the oven.
White onion
Adds aromatic sweetness and savoury depth to the stuffing.

The step that matters

Cover the turkey once it begins to brown. Browning starts quickly on the exposed surface while the thick interior is still cooking. A damp cloth slows surface colour and reduces drying, and frequent basting keeps the skin moist and evenly coloured.

Swap the onion
